Huevos rancheros are a breakfast consisting of either scrambled or fried eggs topped with fresh tomato salsa. They go great with a side of refried beans and warm tortillas.

2-3 eggs
2 medium sized tomatoes
Serrano, santa fe, or dried chilis
1/4 onion


- First of all it's best to start with the salsa for your eggs. Mince your onions and chilis. You can use your favorite chili and the quantity you wish, everybody has a different heat tolerance so make sure you adjust for your tastes. Also, dice your tomatoes and set aside. If you're in a hurry and can't cook your salsa fresh, you can also use one of these ready to use ones.

- Heat up a skillet with some oil and cook your chilis and onions until slighly golden brown. Afterwards, add your tomatos to the skillet, season with salt and pepper and cook until the tomatoes are soft. Your sauce is now ready !

- So now, on to the eggs, you have a choice here, you can either cook your eggs sunny side up, serve and top with your salsa, or you can also scramble your eggs and cook them with your salsa. Try them both and see which one is your favorite !
