Green enchiladas are a mexican favorite given their versatility and because of how much you can play with the recipe and toppings, as always, if you are feeling creative you can garnish with many things if you feel like it, or you can stick with the recipe and stil have a delicious dish

Ingredients:
Tortillas
Cheese or shredded chicken
Green salsa

- To start, heat up a skillet and add some oil.

- Once the pan is hot, add the tortillas and once they're warm and stuff you can stuff them with with the filling of your choice (beans, cheese, chicken, or the combination you wish), turn them over in order to form a shell and cook until both sides are slightly crispy. Set your enchiladas to the side and pat off any excess oil

- Warm up your green sauce and bring to a boil, if you want a spicier salsa, blend with a few serrano or jalapeņo chilies before heating.

- Serve the stuffed tortilla shells on a dish and top them with your green salsa, top them with cheese, cream (or sour cream), chopped onions and cilantro.

- You can add some mexican rice or beans on the side.
